TANGY AUBERGINE SALAD
Another great side dish to be enjoyed with a protein source (lean meat, poultry or oily fish) of your choice. Or, why not add some mackerel to this salad for a delicious lunch time meal.
Ingredients
2 aubergines
One red onion, chopped
1 small bunch of parsley, chopped
1 orange or red pepper
1 red chill, deseeded and chopped
Seeds of ½ pomegranate

Dressing:
Extra virgin olive oil
A splash of pomegranate molasses
Salt & pepper
Juice of 1 lemon
1 tsp cumin seeds
Method
Preheat oven to 180°C
Prick 2 aubergines with a fork, place on a baking tray and into the oven for about one hour. In the meantime, prepare the dressing
Once cooled, peel aubergine and remove stalk- then mash up the flesh into a large bowl
Add red onion, parsley, pepper, red chilli and pomegranate seeds
Pour dressing, mix through and enjoy!
