GLUTEN FREE BANANA & CINNAMON PANCAKES

Being gluten free, doesn’t mean you have to miss out! Try these nutritious banana and cinnamon pancakes, which require no flour whatsoever.

Banana is a fibre rich food which helps to support growth of our gut’s beneficial bacteria, flax seeds are a healthy fat, rich in dietary fibre and the presence of cinnamon helps to balance blood sugar levels.

Ingredients

1 large ripe banana, mashed

2 eggs, beaten

1/4 tsp vanilla extract

1/4 tsp ground cinnamon

1/8 tsp baking powder

2 tbsp ground flax seeds

Coconut oil for cooking

Toppings: Fresh berries, figs, nut butter of your choice or finely chopped nuts

Method

Mix the banana and eggs in a large bowl until soft and smooth

Add vanilla extract, cinnamon, baking powder, flax seeds and mix well

Heat coconut oil in a pan over a low heat

Pour 2 tbsps of batter into the pan for each pancake, cooking for 1-2 minutes on each side

Top with a handful of fresh berries and a nut butter of your choice for maximum enjoyment
