RAINBOW LENTIL SALAD

This easy to make, protein rich salad is the perfect side to a chicken or salmon fillet. A rainbow of vegetables ensures a diversity of nutrients to support optimal fibre intake.

 

(Serves 4)

 Ingredients

1 cup of Puy lentils

One tin of chickpeas

One tin of red kidney beans

Seeds of one pomegranate

One red pepper, chopped

Two tomatoes, chopped

1 small bunch of parsley, chopped

 

Dressing

 Extra virgin olive oil

Salt & pepper

Juice of 1 lemon

1 tbsp balsamic vinegar

 

Method

Boil Puy lentils in boiling water for 15 minutes and drain

Drain kidney beans and chickpeas

Add all ingredients into a bowl, pour dressing and toss

Serve with roasted chicken/ salmon fillet and sweet potatoes
