WINTER WARMER SALAD

 INGREDIENTS

Salad:

30g walnuts

1 cup (200g) black rice

1 pink grapefruit

1 orange, sliced

10 radish, sliced

1 fennel bulb

70g feta cheese, crumbled

A handful of rocket

1 tbsp flat parsley

50g rocket

 

Dressing:

Sea salt and pepper to taste

1 tsp honey

6 tbsp extra virgin olive oil

 

METHOD

    Toast walnuts in a frying pan over medium heat (5 minutes), until browned lightly. Remove from the heat and cool. Chop into smaller pieces and set aside

Cook the black rice according to instructions on the package- cook for 30 minutes on moderate heat and drain well

  Peel grapefruit and orange and slice

  In a large bowl, combine rice, fennel, radish, grapefruit, orange, rocket, feta and walnuts. Mix the salad and stir in the dressing and parsley.
